The delightfully charming Home Sweet Christmas has us returning to the town of Wishing Tree and once again revelling in all the traditions of this small town.

Of all the Christmas traditions, my absolute favourite has to be Cookie Tuesday! I mean, who wouldn’t want such an awesome tradition?

In honour of that, why don’t you have a go at these delicious but very simple sugar cookies?

Mitten Sugar Cookies

Ingredients:

Cookies

6oz plain flour

4oz butter / margarine (at room temperature)

2oz caster sugar

Royal Icing

16oz Royal Icing Sugar

Water

Food colouring / gel

Decorations (like white hundreds and thousands)

Method:

Pre-heat your oven to 130˚C / GM 0.5 / 250˚F.

Beat your butter / margarine in a bowl until it’s soft.

Add the sugar and flour and mix until a soft dough is formed.

Roll out on a floured surface to approximately quarter of an inch thick.

Using a mitten cutter, cut shapes from the dough and lay them on a baking sheet.

Bake for approximately 30 minutes.

Move the cookies to a wire rack to be iced.

Decorate:

Mix your Royal Icing Sugar with water to make a pliant but pipe-able consistency.

Separate your icing into 3 bowls – one for yellow, one for red and one to remain as white.

Pipe a white line around the cuff of the mitten shape.

Pipe a yellow or red line around the rest of the mitten shapes.

Add a little more water to your icing to give a slightly runnier consistency.

Pour or pipe this icing into the lines of the cookies.

Add decorative touches to your cookies by sprinkling hundreds and thousands on the cuffs and adding dots or feathering patterns in different colours.

Wait until the icing sets (1-2 hours) or don’t. Eat and enjoy!
